Apple Pie

Ingredients

 *1 recipe for 9 inch double pie crust, or store bought

  • 8 Granny Smith apples, peeled, cored and sliced
  • 1/4 cup unsalted butter
  • 1.5 tablespoon all-purpose flour
  • 1/4 cup water
  • 1/4 cup white sugar
  • 1/4 cup brown sugar

1. Assemble pie

2. Melt butter in a saucepan over medium heat. 

3. Add flour and stir to form a paste; cook until fragrant, about 1 to 2 minutes. 

4. Add both sugars and water; bring to a boil. Reduce the heat to low and simmer for 3 - 5 minutes. 

5. Remove from the heat. 

6. Pour sauce over pie

Bake in the preheated 425* oven for 15 10 minutes. Reduce the temperature to 350 degrees F and continue baking until apples are soft, 35 to 45 15 minutes.

Fresh Corn Salad

 

Ingredients

  • 4 (5-6 was too much... not enough sauce) ears fresh corn husks and silk removed
  • 10 oz grape or cherry tomatoes about 2 cups
  • cup sliced green onions (about 2-3 green onions)
  • ¼ cup chopped fresh basil
  • 1½ tablespoons Olive Oil
  • tablespoons red wine vinegar
  • ½ 1/4 teaspoon fresh ground black pepper
  • ½ teaspoon kosher salt
  • ½ cup crumbled feta cheese
  •  

    Instructions

  • Bring a large pot of water to a boil. Add corn and return to a boil, cooking for about 5-7 minutes. When corn is done boiling, immediately plunge in a bowl of ice water for a few minutes to cool off. Tip: Due to the shape of corn, using a 9×13 baking pan of ice water works well!
  • Remove corn from ice bath and blot dry. Use a sharp knife to remove corn kernels from cobs and place corn in a mixing bowl.
  • Cut tomatoes in half and add them to the bowl. Add green onions as well.
  • Add olive oil, vinegar, salt, pepper, and toss to coat. At this point it is best to chill the salad. I prefer to chill for 1-2 hours minimum, and up to several hours, or even overnight. The flavor improves as it sits!
  • When ready to serve, add feta and chopped basil and stir to distribute

Mung Beans

24 oz mung beans, cooked 5 min in Instant Pot

1 onion sauteed in coconut oil

add stew meat

add 1 can diced tomatoes

3-4 heaping tsp minced garlic (they use from the can)

add beans

add curry powder

add H2O if not juicy enough

cilantro

salt ~1/2-1 tsp/2 lb beef

 1.8 oz carbs (pretzels, chex, gardettos)

1 oz nuts (cashews, pistachios, peanuts)

1 oz fruit (craisins, raisins)

1 oz candy (skittles, m&ms)
